Ingredients
  1. 1 (8-ounce) package feta cheese
  2. 12 gluten-free crackers, such as Blue Diamond Almond Nut Thins
  3. 12 (¼-inch) slices English cucumber
  4. 1 recipe Lemon Aïoli (recipe follows)
  5. Garnish: lemon curls
Instructions
  1. Cut feta cheese lengthwise into 3 (¼-inch) slices. Using a 1¾-inch flower-shaped cutter, cut 4 flower shapes from each slice, discarding scraps.
  2. On each cracker, layer a cucumber slice, a dollop of Lemon Aïoli, and a feta flower.
  3. Garnish each with a lemon curl, if desired.
  4. Serve immediately.
Notes
  1. • To help keep crackers from becoming soggy, blot cucumber slices on paper towels. Cucumber and cheese slices can be assembled a couple of hours in advance and refrigerated in a covered container until needed. Place on crackers just before serving. For maximum freshness and crispnesss, assemble canapés as close to serving time as possible.

  1. ¼ cup mayonnaise
  2. ½ teaspoon fresh lemon zest
  3. ½ teaspoon fresh lemon juice
  4. ⅛ teaspoon salt
  5. ⅛ teaspoon ground black pepper
Instructions
  1. In a small bowl, combine mayonnaise, lemon zest, lemon juice, salt, and pepper, stirring to blend. Refrigerate in a covered container until needed.
